Mezcal Agua Santa is premium artisanal mezcal. It is handcrafted in Santiago Matatlan, known by the locals as "The World Capital of Mezcal"

MACHETE & MALLET


Harvesting agaves is an art that is mastered by our jimadores. The harvest of a single agave needs at least two people: one with a machete to shave the agave, the other one with a hammer to knock off the engrained roots.

ARTISANAL OVEN


Once the agaves are shaved, they are placed in artisanal ovens, covered with volcanic stones and fired by oak and pine wood. Agaves are roasted from 5 to 7 days.

Pulled by a horse, the tahona-stone wheel crushes the already roasted agave.

FERMENTATION


Open air fermentation in sabino or pine wood barrels takes place from 5-7 days. No sugars, yeasts, artificial flavours, or additives of any kind are added to the process.

DISTILLATION


Mezcal is twice-distilled in copper pots to have a safe drink and clean taste.

BOTTLING

The team bottles and labels the mezcal by hand.





Certified Mezcal



It is really important to do things right. That’s why we comply with Mexican regulations for mezcal certification. If it doesn’t have the hologram (silver stamp) it is not a certified mezcal. The hologram assures consumers our Mezcal Agua Santa is free of sugars, additives and follows the artisanal practices for our approved mezcal recipe.
